Healthy Grilled Chicken and Vegetable Salad Recipe for Weight Loss.

Recipe:

Grilled Chicken and Vegetable Salad

Ingredients:

For the Grilled Chicken:2 boneless, skinless chicken breasts:


1 tablespoon olive oil,
1 teaspoon paprika,
1 teaspoon garlic powder,
Salt and black pepper to taste,

For the Salad:4 cups mixed greens (e.g., spinach, arugula, lettuce):

1 cup cherry tomatoes, halved,
1 cucumber, sliced,
1/2 red onion, thinly sliced,
1/4 cup feta cheese, crumbled (optional),

For the Vinaigrette:3 tablespoons extra virgin olive oil:

2 tablespoons balsamic vinegar,
1 teaspoon Dijon mustard,
1 clove garlic, minced,
Salt and black pepper to taste,

Instructions:

  • Preheat your grill or grill pan to 18px;"-high heat.
  • In a small bowl, combine olive oil, paprika, garlic powder, salt, and black pepper. Rub this mixture over the chicken breasts.

  • Grill the chicken for about 6-8 minutes per side, or until it's cooked through and no longer pink in the center. Cooking time may vary depending on the thickness of the chicken.

  • While the chicken is grilling, you can prepare the salad. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.

  • In a separate small bowl, whisk together the vinaigrette ingredients: olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and black pepper.


  • Once the chicken is cooked, remove it from the grill, let it rest for a few minutes, and then slice it into thin strips.

  • Toss the salad with the vinaigrette dressing and top it with the grilled chicken strips. Add crumbled feta cheese if desired.
